Homemade Refried beans
You can either mash your bean mixture with a potato masher, or pulse chop the mixture with a processor. It all depends on what consistency you prefer.
½ large red onion, diced
2 Tablespoons organic canola or other vegetable oil
1 can red beans or Pinto beans, drained (safe liquid)
2 cloves garlic, crushed or chopped fine
1 small jalapeno pepper or ½ poblano pepper, diced
½ teaspoon salt
juice of ½ lime
in a large fry pan, sauté the onion in the oil until the onions are soft and starting to turn brown. Add the beans, garlic, salt and pepper and heat on medium heat until pepper is fully cooked.
Add the saved liquid and continue stirring for a few minutes. Mash the beans with a potato masher or transfer them to a processor and pulse chop to the desired consistency. Drizzle with lime juice and serve with chips or as an ingredient in your favorite Mexican dish.
