Makes 4 Burgers
1 cup of cooked quinoa
1 Tablespoon extra-virgin olive oil
1 small onion, diced
1 cup of diced shiitake mushrooms (or preferable type)
1 clove garlic, crushed
1 15-ounce can black beans, rinsed and drained
2 tablespoons tomato paste
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon oregano
4 leaves fresh basil, cut up
4 hamburger buns and topping of choice
Cook quinoa according to package directions. During the 15 – 20 minutes that the grain is cooking, heat olive oil in a skillet and add the onions and mushrooms. Sauté until tender, about 10 minutes. Add 1 clove garlic, crushed and sauté only another minute.
In a processor or blender, add the onions mushrooms, garlic and black beans. Process until fully blended.
Place the quinoa in a mixing bowl and add herbs and spices. Then combine the contents of the processor and mix until blended.
Form patties and fry in olive oil until golden brown. Serve on whole grain hamburger buns.
